Be sure to cook any cheese at a low temperature and for a short period of time otherwise it may separate or become tough or stringy.
Grate hard cheese so it will melt easily.
Shred or cut soft cheese into cubes for grilling,
baking or adding to sauces.
Add cheese at the end of cooking and heat gently for just as long as it takes to melt.
The younger the cheese, the better it will melt.
The older the cheese, the fuller the flavour.
In The
Microwave
Cheese will not brown or crisp in the microwave.
For toppings, it’s
best to add grated
cheese at the end
of the cooking time
say for the last 30
to 60 seconds. (Most
microwave dishes
require standing
time to complete
cooking so this is a
great time to add
the cheese).
When cheese is
incorporated in a
recipe the power
level is usually lower
(about 70%) so that
the cheese doesn’t
overcook and
become tough.
As in normal
cooking, you need
to avoid overdoing
cheese in the
microwave.
